The creamy saltiness of feta pairs perfectly with a bit of spice. In this classic Greek recipe for feta psiti, feta is simply baked with olive oil and a generous amount of chili flakes.

INGREDIENTS
1 thick slab feta cheese, about 8 oz (225g)
2 tablespoons olive oil
2 teaspoons dried red chili flakes, or to taste
1/2 teaspoon dried oregano (optional)
METHOD
Preheat the oven to 400 F (200 C).
Lay the feta in a small baking dish (no need to crumble it!). Drizzle with olive oil, then sprinkle with chili flakes (be generous!). Add oregano, if using.
Bake uncovered in the preheated oven for 10 to 15 minutes, until bubbly. Serve immediately with crusty bread or pita bread.
Note that the feta will harden as it cools, so this dish is best enjoyed hot and straightaway!
